Make A Delicious Homemade Lemon Pie In Few Steps

Lemon has a very unique taste and many health benefits, also we can use it in several kinds of dishes and still it would make those dishes mouth watering, however today we will only talk about lemon pie.

I-Lemon Pie Ingredients:

For the pie crust you need:

-2 cups of butter.

-½ a cup of icing sugar.

-½ a cup of flour.

-2 eggs.

-3 tbsp of water.

Now for the lemon cream:

-4 lemons juice.

-Zest of 2 lemons.

-3 egg yolks.

-4 tbsp of cornstarch.

-2 cups of icing sugar.

-½ a cup of butter.

-2 tbsp of water.

For the meringue you need:

-3 egg whites.

-2 tbsp of sugar.

-A pinch of salt.

II- Preparation:

-We start by preparing the lemon pie crust; first you preheat the oven at 200°C.

-In a food processor mix the eggs with the sugar, salt and the water until you have a foamy mixture.

-With the tips of your fingers mix the flour and butter until you have a sandy paste, then mix it with the prepared eggs.

-Cover your dough with plastic film and let it rest for about 30 minutes, once done spread well it in a pie dish covered with parchment paper.

-Prick your dough with a fork then put it in the preheated oven for at least 20 minutes until it turns nice and brown.

-Now to prepare the lemon cream you begin by mixing the egg yolk, lemon juice, lemon zest and the sugar in a food processor until you have a homogeneous mix.

-Next melt the butter in a sauce pan on a low heat until its color changes then add the eggs and lemon mix.

-Then bit by bit add the cornstarch and don’t stop whisking, last step you need to add the 2 tbsp of water.

-Keep whisking till the lemon cream starts to boil and its texture becomes thick, only then you can take it off the heat.

-Now the lemon cream is ready, pour it over the pie crust.

-Leave your lemon pie to cool and in the mean time prepare the meringue.

-Whisk the egg whites with the pinch of salt until they turn foamy and adding the sugar slowly, you know your meringue is ready once you have a soft tick texture.

-Decorate your pie with the meringue and put it in the oven for 3 to 5 minutes until the top of the meringue turns golden and caramelized.

Let it cool then garnish it with some fresh fruits or you can serve as it is.
